The “Standard American Diet” consists of approximately two-thirds processed food. Regular exercise is vital, but you can't outrun a bad diet. No time spent on the treadmill, elliptical, or stationary bike can completely counteract poor food choices. Who would've thought a choice of food could have such a profound influence on health and longevity? Some might think it's too late to make a difference if you've already reached middle age, but they would be wrong. Nobody said that to Dr. Ellsworth Wareham, a distinguished heart surgeon who adopted a plant-based diet in his mid-fifties and lived to the age of 104. He continued training surgical residents until he was ninety-four, retiring to travel and see more of the world.

Many nutrition experts have extensively published the importance of eating minimally processed fruits, vegetables, grains, and beans. My review of countless studies highlights the critical role of plants in feeding the garden of microbial organisms that reside in our large intestines and avoiding the potential harm from ultra-processed food.

Some common foods many of us grew up eating have proven to be potentially harmful to our gut garden. These include processed sugars, processed meats, dairy products, saturated fats, and other highly processed foods. 

It's important to understand that the path to optimal health is rarely a direct route. There are often unexpected bumps, setbacks, and side roads along the way, but what's crucial is your commitment to keep moving forward.

Additionally, we want to strive for excellence as we move along, but not let the pursuit of it get in the way of progress. For example, selecting organic produce is healthier than conventionally farmed, but avoiding the latter when organic is unavailable may be worse for your health. A renowned nutrition expert, Dr. Michael Greger, recommends, “Never hesitate to fill your face with as much fruit and veggies as you can, even if organic is not accessible.” He thinks the trade-off in this circumstance is a win, and I agree.
